Ingredients 

  • 230g of spinach. 
  • One onion.
  • Three garlic cloves minced.
  • 20 jumbo pasta shells. 
  • 270g of ricotta. 
  • 30g parmesan. 
  • One egg.

Sauce

  • One cup of passata. 
  • One onion and garlic clove crushed. 
  • Cup of chicken stock.

Method 

  1. First of all fry off the onion and garlic in a pan to make the sauce then add the passata and stock into the pan and bring to a boil, simmer for 20 minutes. 
  2. Heat your oven to gas mark 4 then fry off the garlic and onion in a pan to make the pasta, reduce heat and add spinach then stir in some ricotta. Next, stir in an egg fast and cook your pasta shells in some boiling water. 
  3. Spread the tomato sauce from earlier in a dish, fill the shells with your ricotta mixture and sprinkle the parmesan on top, bake for 20 minutes then enjoy with some more cheese on top!
