Evaporated milk is one of those storecupboard staples that quietly transforms cooking, lending a velvety richness to curries, soups, mashed potatoes and puddings without the heaviness of cream. For Slimming World members, it sits in an interesting middle ground: it is not free, but it is considerably lighter than double or single cream, which makes it a clever swap when you want indulgence without blowing your daily syns. A typical 100ml of full-fat evaporated milk lands around 6 syns, while the light version comes in noticeably lower, so reading the tin carefully is well worth your time before you pour with abandon.
The trick with evaporated milk on a SW plan is to use it as a finishing touch rather than a base. A modest splash stirred through a tikka masala at the end of cooking gives you that creamy, restaurant-style sauce for a fraction of the syns you would spend on coconut cream or double cream. Likewise, a tablespoon whisked into mashed potato or cauliflower mash creates a luxurious texture, and a little drizzle over tinned fruit or a warm crumble makes a surprisingly satisfying pudding on a chilly evening.
