SW Kidney Bean Soup

This soup is a great meal to make when you have lots of veggies which need to be used up in your fridge and is super easy to make if you are a lazy cook!

Ingredients

  • One onion.
  •  Two garlic cloves.
  •  Can of chopped tomatoes.
  •  One can of kidney beans.
  •  One can of Tuscan beans.
  •  Carrot and celery.
  •  Two veggie stock cubes.
  •  500ml of water.
  •  Two teaspoons of mixed herbs.
  •  Two teaspoons of paprika.

Method

  1. Begin making your soup by chopping all the ingredients then simply put all the ingredients into a saucepan, bring to a simmer and cook for around 30 minutes until all the ingredients are tender.

SW Kidney Bean & Beef Chilli

If you have some beef in the fridge, pairing it with some kidney beans to make chilli is a great cosy meal to enjoy on a weeknight, and best of all syn free!

Ingredients

  • Two chopped onions.
  •  Two cans of chopped tomatoes.
  •  Three garlic cloves.
  •  Four spoons of tomato paste.
  •  Pinch of chilli, cumin, coriander, and cinnamon.
  •  800g of lean beef mince.
  •  A teaspoon of Worcestershire sauce.
  •  Beef stock cube.
  •  Can of kidney beans.
  •  Can of mixed beans.
  •  Two roasted red peppers.
  •  Rice to serve.

Method

  1. Start by spraying a frying pan with low cal cooking spray then fry off your onions and your beef mince. Stir in the spices, tomatoes and tomato paste, allow to cook, then add in the beef stock cube plus Worcestershire sauce.
  2.  Bring to a simmer for around 50 minutes until cooked and the sauce becomes thick.
  3.  Stir in all of your beans and the roast pepper and cook for a further 10 minutes.
  4.  Serve with rice and enjoy!
