Two carrots chopped.
Two celery sticks chopped.
Two teaspoons of coriander and cumin.
Low cal cooking spray.
One onion sliced.
Two garlic cloves chopped.
Cup of red lentils.
Pinch of fresh ginger.
1.2 litres of veggie stock.
Pinch of chilli.
Spoon of tomato paste.
Start by heating low cal spray oil in your pan then add onion, garlic, ginger, and your celery.
Next, add your carrots and a few spoons of stock.
Stir the lentils in, spices and tomato paste.
Add your stock and boil/simmer for around 20 minutes.
Serve with coriander!
Overall, Weight Watchers carrot and lentil soup is a great low syn healthy meal or snack to have as is the other range of its soups, we would suggest having them in moderation however since some can be quite high in sugar.
