Mushroom Pappardelle

Ingredients

  • 500g dried pappardelle pasta.
  •  450g of mushrooms.
  •  Can of tomatoes.
  •  90g of quark.
  •  Large pinch of dried herbs.
  •  Low-calorie cooking spray.
  •  One red pepper.
  •  150ml hot vegetable stock.
  •  1 tbsp tomato purée.

Method

  1. Start by cooking the pasta then spray a pan and fry the mushrooms for five minutes, add in the pepper and fry again then the tomatoes, quark and herbs. Add the paste and stock then bring to a boil and simmer for ten minutes.
  2.  Stir into the pasta next and serve with a salad!

Mushrooms On Toast

Ingredients

  • Two slices of wholemeal bread.
  •  200 grams of mushrooms.
  •  Chopped garlic.
  •  Spoon of quark.
  •  Seasoning.

Method

  1. Start by heating your pan and frying off the mushrooms then add in the garlic and toast your bread.
  2.  Add in the quark to make the mix creamy, season and enjoy!
