Low Syn Sausage Casserole

This sausage casserole serves up to four people and is SYN FREE!

Ingredients

  • Three chopped carrots.
  • One onion chopped.
  • 10 Slimming world syn free pork sausages.
  • Three celery sticks chopped.
  • Two cans of chopped tomatoes.
  • One tsp of rosemary chopped and one tbsp of parsley.
  • 280ml of chicken stock.
  • Low cal cooking spray.
  • 300g mushrooms sliced.
  • A tsp of sweetener.

Method

  1. Begin by heating your oven to gas mark 6 and start frying off your veggies in a pan, add the herbs and chicken stock then bring to a boil.
  2. Season the mixture lightly and allow it to simmer for around 7/8 minutes.
  3. Take your sausages and spray them with your oil then cook them for at least 20 minutes.
  4. Cut your mushrooms and sausage into rounds then throw into the pan along with your sweetener and the cans of tomato.
  5. Bake for around 15 minutes.
