Our SW Soba Noodles Recipe

If you find store-bought soba noodles to be too high in syns, we've got a great low-syn recipe for you to check out below.

Ingredients

  • 375g of soba noodles.
  • 400g of tofu cut.
  • Spring onions sliced.
  • Ginger grated.
  • Two spoons of soy sauce.
  • Two spoons of oyster sauce.
  • One spoon of cornflour.
  • 400g shiitake mushrooms.
  • Cup of vegetable stock.
  • Pak choi sliced.
  • Two sliced red peppers.
  • One chilli sliced.

Method

  1. Cook the noodles and set aside, then take your work and heat some low cal cooking spray, then fry off the firm tofu until golden, this might take around 5 minutes.
  2. Spray the pan and add in your veggies, fry for around 5 minutes.
  3. Next mix your sauces with your cornflour, stock and two spoons of water, and let it reduce for a few minutes.
  4. Serve over your noodles and enjoy!
