SW Olive Greek Salad

Ingredients

  • 8 olives in brine.
  • One onion, cucumber and green pepper are diced.
  • 250g of watermelon flesh.
  • 150g of feta.
  • Four tomatoes chopped into wedges.
  • Seasoning

Method

  1. Put all your ingredients into a bowl, mix, season and drizzle with some lemon for an easy SW friendly salad!

SW Tomato & Olive Pasta

Ingredients

  • 100g of frozen spinach.
  • 100g of dried wholemeal pasta.
  • Can of chopped tomatoes.
  • Eight black olives from brine.
  • One garlic chopped.
  • Celery stick chopped.
  • One onion diced.

Method

  1. Start by frying your onion and celery in some low cal cooking spray and water for around ten minutes then add in the garlic, stir for two minutes then pour in the chopped tomatoes.
  2. Fill the can with water, pour this in and simmer the mix for about ten minutes, cook the pasta during this time.
  3. Add in your olive and spinach and simmer for another 5-10 minutes with the lid on.
  4. Toss in the pasta and serve with some more black pepper.
