Our Slimming World Chargrilled Chicken Recipe

Ingredients

  • Four chicken breasts.
  • Low cal cooking spray.
  • A pinch of ginger and garlic powder.
  • Juice and zest of two limes.
  • Two fat-free pots of natural yoghurts.
  • Three spoons of curry powder.
  • One spoon of soy sauce.
  • Chopped mint and coriander.
  • One onion.
  • Cherry tomatoes.
  • Spinach.
  • 400g of pasta.

Method

  1. Firstly cut your chicken breasts into strips then marinate in the fridge, for the marination you will need to mix your lime, ginger, garlic and curry powder.
  2. Slice your tomatoes, onion and spinach then mix in with your cooked pasta.
  3. Make your dressing with mint, coriander, yoghurt and soy sauce. Take your chicken from the marination then grill for 8 minutes on each side or until cooked through.
  4. Top your pasta salad with the chicken and serve!
