Ingredients

  • Two cups of white beans.
  • Pinch of onion and garlic powder.
  • 50g of carrots chopped.
  • Two onions diced.
  • Spoon of mixed herbs.
  • One spoon of balsamic vinegar and sauce.
  • Tablespoon of paprika.
  • Seasoning.
  • 1.2 litres of veggie stock.
  • 500ml of passata.
  • Three cloves of diced garlic.
  • 200g of butternut squash.

Method

  1. Begin by soaking your white beans in a bowl overnight.
  2. Spray a pan with oil and fry off your carrots and onions then garlic, add in the herbs, paprika and squash, continuing to fry.
  3. Next add the passata, stock, balsamic vinegar, sauce and onion and garlic powder into the pan and simmer for about 50 minutes until the squash has softened.
  4. Put the sauce in the blender, blending till smooth then add your beans to a pot of boiling water and cook for 30 minutes or as required.
  5. Heat your oven to low heat, combine the beans and sauce in a pot then bake for three hours, season and serve!
