Slimming World Roulade Recipes - Our List!

Body goals and slimming have become one of everyone's new year's resolutions for 2020, so we've collated a handy list of the best slimming world recipes for a a healthier cheat day. Read on to learn more, and check out our site for more recipes, tips and more!

1) Strawberry Roulade

Strawberry isn't the most popular flavour, we know, but in the slimming world, a strawberry cake is an excellent way to incorporate fresh fruits into your desserts. While no healthy cake will be an absolute taste sensation, we're sure this will satisfy your sugar cravings- this is one of the healthiest recipes.

Ingredients:

  • 4 eggs (small-medium size works well)*
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence*
  • 1 tub of quark (250g)
  • 3 tablespoons of sweetener (level spoons- Don't heap unless you plan to heap on some pounds)
  • 1 sachet of White Chocolate Options/Highlights (pick your favourite flavour)
  • Fruit of Your Choice (we used strawberries, but you can turn this into a blueberry fruit or a raspberry fruit roulade too- a slimming world raspberry roulade is also a delicious fruit cake idea)

Method:

  1. Separate all the eggs into two bowls, one containing the whites and one with the egg yolks
  2. Mix up ½ tub of your quark, the sweetener, vanilla essence & the baking powder to the separated yolks.
  3. Whisk the yolks until you achieve a creamy consistency, set aside.
  4. Whip the egg whites until you achieve stiff peaks. This is the same step you would take when making meringues.
  5. Add half of the whipped egg whites to the egg yolk mixture you just made and gently fold it in.
  6. Add the remaining half of the egg whites once the yolk mixture is combined.
  7. Line an oven tray with non-stick parchment / baking paper. NOTE: We are not talking about Greaseproof paper! Next, grease the paper with oil or butter- we suggest oil as it is a healthier option.
  8. Pour the batter mixture onto the lined tray.
  9. Bake for 15-20 minutes until the cake is golden brown, which is usually around 175°C. This is dependent on how your oven works.
  10. Whilst warm, carefully peel the paper off the cake. Don't wait for the cake to cool before doing this. If we hadn't greased the paper, our cake would've stuck and we'd be left with an awful craving for sugar, forcing us to resort to a calorie-maxed Dairy Milk Bar. Once peeled, wait for the cake to cool Don't be tempted to munch at it- we know waiting is a pain!
  11. Add the Options/Highlights sachet of your choice to the remainder of the quark and stir to combine.
  12. Spread the quark onto your cooled cake and arrange the fruit- we recommend slicing it thickly, but this is entirely up to you.
  13. Roll the cake up gently. You can now get creative and decorate with toppings to the cake, but we left ours plain- it's nice with a hot cup of tea.
  14. Slice the cake. It is now ready to eat!

2) Coffee Roulade

For coffee lovers, this one will be an absolute treat- it's easy to make too. It is also our personal favourite- we LOVE it.

Ingredients:

  • 4 eggs (small-medium size works well)*
  • 1 tsp baking powder
  • 1 tsp vanilla essence*
  • 1 tub of quark (250g)
  • 3 tablespoons of sweetener (level spoons- Don't heap unless you plan to heap on some pounds)
  • 1 sachet of White Chocolate Options/Highlights (pick your favourite flavour)
  • 1/2-1 teaspoon of Instant Coffee
  • Optional: Icing Sugar and Cocoa Powder / Coffee Powder to taste

Method:

  1. Follow steps 1-10 in recipe 1 for creating the basic cake mix and baking it until golden brown.
  2. Add the Options/Highlights of your choice to the remainder of the quark.
  3. Dissolve half a teaspoon- one teaspoon of instant coffee in water- usually it is faster to mix it with boiling water and let it cool.
  4. Add this to the mixture for the "frosting".
  5. Spread the quark frosting mix onto the cooled cake and sprinkle some cocoa powder lightly across.
  6. Roll the cake up into a swiss roll shape.
  7. If you wish, you can dust the cake with icing sugar followed by coffee powder/cocoa powder or use any of them individually
  8. Slice the cake and enjoy!

3) Chocolate Chip Roulade

For a classic treat to make sure you don't miss out on the delicious non-diet food choice (don't worry, power through! Achieve your goals!), we have written this chocolate chip roulade recipe for the ultimate solution to sugar cravings. Be aware that this is much more rich in calories than the recipes above. Everyone will love this recipe!

Ingredients:

  • 4 eggs (small-medium size works well)*
  • 1 tsp baking powder
  • 1 tsp vanilla essence* + 1/4 teaspoon for frosting
  • 1 tub of quark (250g)
  • 3 tablespoons of sweetener (level spoons- Don't heap unless you plan to heap on some pounds)
  • 1 sachet of White Chocolate Options/Highlights (pick your favourite flavour)
  • 1 Cup Icing Sugar Sifted
  • 1/2 Cup Cocoa Powder
  • 4 tablespoons (2 Oz) unsalted butter (softened)
  • 1 teaspoon Milk (we suggest whole, but semi-skimmed is fine)
  • Optional: Cocoa Powder to taste

Method:

  1. Follow steps 1-10 in recipe 1 for creating a basic roulade cake mix and baking it.
  2. Mix the Options/Highlights of your choice (we recommend choc chips) to the remainder of the quark.
  3. We are now going to create a frosting to go alongside it: start by beating the softened butter until light and fluffy, significantly lighter in colour and almost doubled in volume. This takes time!
  4. Next, Mix the 1/4 teaspoon of vanilla essence, powdered sugar, cocoa powder and milk. You can add salt too, a small amount. Beat until smooth. Incorporate more milk if you wish to change the consistency.
  5. Lay the cooled roulade out. Spread the mixtures across the cake in strips, e.g: chocolate frosting, quark frosting, chocolate frosting, quark, and vice versa.
  6. Roll up the Cake into a swiss roll shape. You can now get creative with the remainder of the frosting mixture, or you can pack it and use it another time.
  7. Slice and enjoy!

* Vanilla essence is a midpoint between extract and flavouring. Vanilla flavouring is an almost water-like consistency and is usually for adding scent and light flavour. Extract is a better option for batters, as the flavour is hard to bring out- so the thicker texture of vanilla extract works best. As we are trying to keep calories low, vanilla essence is our recommended choice. It will provide sufficient flavouring and a scrumptious classic cake batter smell.

*A vegan alternative to eggs is aquafaba (chickpea liquid). As a guideline, 3 tablespoons of aquafaba is equivalent to 1 whole egg. We haven't tested the recipe using this, but there are plenty of tutorials online which can help you. There is claimed to be no taste variation between using aquafaba and egg whites, however it takes slightly longer to whip.
