230g spinach
1 onion, diced
3 garlic cloves, minced
20 jumbo pasta shells

30g parmesan (Healthy Extra A)
1 egg
Sauce
1 cup passata
1 onion and 1 garlic clove, crushed
1 cup chicken stock
Method
Make the sauce – Fry onion and garlic, add passata and stock, simmer for 20 mins.
Prepare filling – Fry onion and garlic, add spinach until wilted, stir in ricotta and egg.
Cook pasta shells – Boil until just tender.
Assemble – Spread sauce in a baking dish, fill shells with spinach-ricotta mixture, top with parmesan.
Bake – 20 mins at Gas Mark 4. Serve hot.
