Our SW Fairy Cake Recipe
Fairy cakes can be high in syns, so why not make your own SW version at home for when you feel like something sweet? Our recipe below has just 2.5 syns a cupcake and are lemon drizzle flavour!
Ingredients
Six spoons of sweetener.
Two eggs.
50g of low fat spread.
Two drops of vanilla essence.
100g of self-raising flour.
One lemon.
Nine teaspoons of icing sugar.
Lemon juice.
Yellow food colouring.
Method
Start the recipe by heating your oven to gas mark 6 then lining a muffin tray, grate your lemon zest in a bowl and reserve the zest for later use.
Whisk your eggs, and sweetener and spread in a bowl, add the flour and combine with the zest and vanilla essence, bake in the oven for 20 minutes.
To make your drizzle mix the sugar, lemon juice and food colouring then drizzle over the cupcakes.
