SW Oat Blueberry Muffins
Pinch of baking powder.
30g of oats.
5g of flaked almonds.
Pinch of cinnamon.
55g of blueberries.
Two spoons of fat-free plain yogurt.
Low cal cooking spray.
Drop of vanilla extract.
Start by heating your oven to 180 degrees then combine all of your dry ingredients in a bowl, stir in the berries, spray your bun tin and then spread the mixture evenly between 3.
Place the flaked almonds on top of the mix and spray with low cal cooking spray.
Bake for 25 mins and serve!
SW Blueberry Cheesecake
Six sheets of gelatine.
250g of quark.
Two spoons of sweetener.
Drop of vanilla extract.
30g of plain flour.
230g of blueberries.
One sachet of sugar-free blueberry jelly.
Pinch of cinnamon.
One egg yolk and two spoons of white.
15g of oats.
200g of fat-free plain Greek yogurt.
350g of vanilla yogurt fat-free.
Start by soaking the gelatin in a bowl for around 10 minutes until it starts to become soft then spray a cake tin and line it with some clingfilm.
Place your yogurts, quark and vanilla extract into a blender, pour 100ml of hot water into a bowl, take the gelatin and pop it in the bowl until it dissolves.
Add everything else to the blender reserving a teaspoon of the sweetener, and chill the mix for around two hours.
Dissolve the jelly in around 140ml of water, add a squeeze of lemon juice and allow it to cool.
Pour the blueberries over the cheesecake mix, top with the jelly and allow the whole thing to chill for another two hours until it becomes set.
Now take your flour, oats, cinnamon, egg and reserved sweetener into a bowl and mix. Spread out on a baking tray and bake for 15 minutes.
Scatter the crumble mix over the top and enjoy!
