Ingredients

  • 650ml skimmed milk
  • 2 tablespoons sweetener
  • 100g pudding rice
  • Pinch of cinnamon
  • Pinch of nutmeg
  • 1 mango (peeled and sliced)

Method

  1. Preheat your oven to gas mark 2 (150°C / 300°F).
  2. Lightly spray a baking dish with low-calorie cooking spray.
  3. Rinse the pudding rice thoroughly, then place it in the dish along with the milk and sweetener.
  4. Stir in the cinnamon and nutmeg, then add the mango slices.
  5. Bake for 1 hour, stir well, then return to the oven for a further 30 minutes until the rice is soft and creamy.
