Ingredients

  • 700g of new potatoes.
  • Two sprigs of thyme.
  • Five shallots diced and peeled.
  • Seasoning.
  • 20g of parmesan.

Method

  1. Start by heating your oven to 220 degrees then parboil your potatoes for 15 minutes, spray a roasting dish and transfer (put them straight into the pan for tinned).
  2. Mash up your potatoes in the tin and sprinkle the shallots on top as well as the Parmesan and seasoning then bake for 20 minutes.
