Our recipe below is for lemon drizzle cakes and will set you back 4 syns a slice!

Ingredients

  • Six eggs.
  • One pinch of salt.
  • A pinch of baking soda.
  • One spoon of lemon juice and the zest of two.
  • Around 130g of sweetener.
  • 145g of self-raising flour.
  • Lemon juice and zest.
  • Two lemons juiced plus two spoons of sweetener (for the syrup)
  • Four spoons of icing sugar.

Method

  1. Start by heating your oven to 180 degrees then line a cake tin and spray, it should be around 20cm. Separate your egg whites from the yolk add some salt and whisk until the volume has doubled.
  2. Now get your yolks, sweetener and lemon juice and combine, and in the zest and whisk again.
  3. Put in half of your flour and the baking soda then folds in, add the rest of your egg whites plus flour.
  4. Move to your cake tin and bake for half an hour until golden and risen.
  5. Once cold, make a few pricks in your cake and put the syrup and icing.
