  • Litre of stock.
  • Three spoons of Greek fat-free yoghurt.
  • Chopped chives.
  • Small chilli chopped.

Method

  1. Place your veggies, stock and one and a half tins of sweetcorn into a pan, bring to a boil and simmer for around 20 minutes.
  2. Allow the soup to cool down the blend until smooth.
  3. Add your sweetcorn back in as well as the yoghurt, chilli and chives. Serve hot!

Sweetcorn Fritters

Ingredients

  • Two spring onions.
  • Two eggs.
  • Half a red chilli.
  • One can of sweetcorn.
  • Chopped chives.

Method

  1. To begin, blend up your onions, chives, 3/4 of the sweetcorn, chilli and eggs up, then add your sweetcorn and mash together with your hands.
  2. Spray a pan with low cal cooking spray then cook the fritters for around 3 minutes on each side.
