Braising the red cabbage gently allows you to really pack in flavor, without adding a lot of calories. You’ll want to add this braised red cabbage to your side dish repertoire, no Christmas Day pork or beef roast will ever be the same without this recipe.

Cabbage is a great staple in any diet. It contains plenty of vitamins and minerals essential for maintaining good health, without having a high amount of carbs because of the high water content. It has plenty of folate, a vitamin essential to pregnant mothers, and a vitamin that is usually found in cereals. It can be hard to get when trying to cut carbs. It also contains vitamin C, an antioxidant, and potassium, which helps support good blood pressure and heart health.

The vinegar used in this is really good for boosting digestive health. Vinegar contains prebiotics, which help the bacteria in your digestive system break down the food you eat into nutrients useful for your body. Used with a probiotic, prebiotics can really make a difference. It’s a great way to boost general immunity, which is especially useful during cold and flu season.

Here’s everything you’ll need to search for and add to start cooking this red cabbage recipe:

1 Medium red cabbage, to be cored and julienned (or grated, depending on your preference)

1 Red onion, to be julienned

1 Apple, to be cored and diced (Pink Lady is a great choice, but good roasting apples, like Honeycrisp will do. Search your local supermarket.)

1/2 tsp of cinnamon

2 tbsp of sweetener (A good sweetener is raw monk fruit. It is an all natural sweetener that contains no calories.)

3 tbsp of white wine vinegar

3 tbsp of balsamic vinegar

3 tbsp of water

Slow Cooker Slimming World Red Cabbage Recipe

Steps:

  • 1. Chop red cabbage by cutting into quarters, discard outer leaves and remove the  inner core and then julienne (or if you prefer grated, use the largest holes on a box grater)
  • 2. Halve the onion and finely julienne
  • 3. Remove the core and dice your apple
  • 4. Add to slow cooker along with your water, white wine vinegar, balsamic vinegar, sweetener and cinnamon.
  • 5. Cook on high, stirring occasionally until red cabbage is tender.

Side Note:

If you don't have the time to cook in a slow cooker, you could have it braised in the oven by placing all your ingredients into an ovenproof dish and covering it with tin foil, on low heat. This should cut your cooking time from nearly 6 hours to only 2 hours. Using the oven to roast the red cabbage is great for when you’re in a hurry, and makes it perfect for a weeknight meal or when you are preparing it for part of a larger meal.
