Slimming World Shakshuka

Shakshuka is Middle Eastern in origin and has become one of the most popular brunch recipes in the UK for good reason — it is deeply flavourful, visually beautiful, and genuinely filling. On Slimming World, it is completely syn-free: eggs, tomatoes, peppers, and onion are all free foods, and the spiced tomato sauce they are poached in counts as nothing. The entire dish comes together in one frying pan in about 25 minutes, and the result looks like weekend brunch effort even on a weekday. The runny-yolked eggs in vivid red sauce with flecks of green parsley is one of the most appetising things you can make on plan.

Ingredients

Serves 2

  • 4 large eggs
  • 1 x 400g tin chopped tomatoes
  • 2, deseeded and sliced red peppers
  • 1, finely diced onion
  • 3, crushed garlic cloves
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp (adjust to taste) chilli flakes
  • 200ml passata
  • to taste salt and black pepper
  • 6 sprays Frylight cooking spray
  • small handful, roughly chopped fresh parsley

Method

    Spray a large, deep frying pan (one with a lid) with Frylight and heat over a medium flame. Add the onion and cook for 5 minutes until softened.

    Add the sliced red peppers and continue to cook for another 3–4 minutes until they begin to soften.

    Add the crushed garlic, cumin, smoked paprika, and chilli flakes. Stir for 1 minute to toast the spices.

    Pour in the chopped tomatoes and passata. Stir well, season with salt and pepper, and simmer for 8–10 minutes until the sauce has thickened and the peppers are fully tender.

    Taste the sauce and adjust seasoning — it should be bold and well-spiced.

    Using a spoon, make four small wells in the tomato sauce. Carefully crack an egg into each well.

    Place the lid on the pan and cook over a low heat for 4–6 minutes, until the egg whites are set but the yolks are still runny. If you prefer firmer yolks, cook for 1–2 minutes longer.

    Scatter with fresh parsley and serve immediately, directly from the pan, with wholemeal pitta or Healthy Extra bread for dipping.

Tips & swaps

The lid is essential — the steam it traps is what cooks the egg whites from above without overcooking the yolks. Lift the lid and check every minute once the eggs go in, as they can go from runny to fully set very quickly. For extra richness without syns, add a tablespoon of fat-free yogurt on top of each egg before serving.

Crumbled reduced-fat feta cheese on top (used as part of your HExA) adds a lovely salty, creamy contrast to the spiced tomato sauce.

Can I add meat to shakshuka?

Yes — lean back bacon, diced chicken breast, or extra-lean turkey mince can all be added to the tomato sauce before the eggs for a more substantial version. All three are free on Slimming World. Cook the meat first in the pan with Frylight, then build the tomato sauce on top. Diced lean merguez-style spiced turkey sausages (check the syn value of the specific brand) are traditional in North African versions of the dish and can add excellent spice depth.
