  • 2, peeled very ripe bananas
  • 2 large eggs
  • 80g (40g per person) rolled oats (Healthy Extra B) (Use as HEB — weigh carefully for each serving)

  • 8 sprays Frylight cooking spray

Method

    Mash the two ripe bananas thoroughly in a large bowl with a fork until smooth and lump-free — riper bananas mash more easily and produce a sweeter batter.

    Add the two eggs to the mashed banana and whisk together well until fully combined.

    Stir in the rolled oats and a pinch of cinnamon, mixing until the batter is thick and even. Leave to rest for 2 minutes to allow the oats to absorb some of the liquid.

    Spray a large non-stick frying pan with Frylight and heat over a medium heat.

    Spoon the batter into the pan in roughly 3–4 tablespoon rounds, leaving space between each pancake. Cook for 2–3 minutes until the edges look set and the underside is golden.

These pancakes are delicate when first flipped — use a thin, flexible spatula and be gentle. If your batter feels too loose, leave it to rest for another minute. Frozen banana works well too — defrost it first and drain off any excess liquid. These pancakes do not store or reheat well, so they are best eaten fresh.
