Slimming World Banana Oat Pancakes

- 2, peeled very ripe bananas
- 2 large eggs
- 80g (40g per person) rolled oats (Healthy Extra B) (Use as HEB — weigh carefully for each serving)
- pinch ground cinnamon
- 8 sprays Frylight cooking spray
Method

Mash the two ripe bananas thoroughly in a large bowl with a fork until smooth and lump-free — riper bananas mash more easily and produce a sweeter batter.

Add the two eggs to the mashed banana and whisk together well until fully combined.

Stir in the rolled oats and a pinch of cinnamon, mixing until the batter is thick and even. Leave to rest for 2 minutes to allow the oats to absorb some of the liquid.

Spray a large non-stick frying pan with Frylight and heat over a medium heat.

Spoon the batter into the pan in roughly 3–4 tablespoon rounds, leaving space between each pancake. Cook for 2–3 minutes until the edges look set and the underside is golden.

Carefully flip each pancake and cook for a further 1–2 minutes until golden on the second side.

Serve immediately, topped with fresh berries, a dollop of fat-free yogurt, and a drizzle of sweetener if desired.

Are banana oat pancakes syn-free on Slimming World?
Yes — bananas are free on Slimming World, eggs are free, and rolled oats at 40g per person count as your Healthy Extra B. Frylight spray is free. The entire recipe is syn-free for two people as long as each person uses their own 40g of oats as their HEB allowance. Note that bananas are a free food but not a Speed Food on Slimming World — they are filling and nutritious but do not have the Speed Food status that berries and other fruits do.
Can I use other fruits instead of banana?
The banana is what makes this recipe work structurally — it acts as a binder alongside the egg and provides the natural sweetness that holds the pancakes together without flour or syrup. Without banana, the batter would not hold. That said, you can add additional free fruit to the batter or as toppings: grated apple, blueberries stirred in, or strawberries sliced on top all work well. Mashed banana is not really substitutable in this specific recipe, but the topping combinations are completely flexible.
What can I serve with these pancakes to keep everything syn-free?
Fresh berries (strawberries, blueberries, raspberries) are all free and Speed Foods on Slimming World — they are the best topping. Fat-free natural yogurt or fat-free fromage frais adds creaminess for zero syns. A few drops of vanilla extract or a pinch of additional cinnamon on top costs nothing. If you want a sweet drizzle, most sugar-free or no-added-sugar syrups are free on plan. Avoid regular maple syrup or honey, which are around 1.5–2 syns per teaspoon.
