Why Should I Cook Hunters Chicken?

Hunters chicken is a classic meal that combines basic chicken breasts and a tasteful homemade BBQ sauce. This is a unique combination that works together to provide a fulfilling dinner that you will want to make again and again. And the best part is that it only takes a maximum of 20 minutes to prepare.

The thing that takes the longest is the chicken as you always want to make sure your chicken is cooked but other than that, is a very quick and easy recipe for newbies who want to get into cooking as well as those of you who tend to leave a busy lifestyle.

Ingredients List

For The Chicken And Sauce:

  • 1/2 tbsp white wine vinegar
  • 1/2 tbsp smoked paprika (sweet or hot, it does not really matter)
  • 1 1/2 tsp garlic granules (or one clove of garlic)
  • a pinch of cayenne pepper
  • 85 grams of tomato ketchup
  • Approximately 12 rations of smoked bacon ( you can also use pancetta, it is your choice)
  • 4 skinless and boneless chicken breasts
  • 150 grams grated mozzarella cheese
  • 15 grams of fresh parsley leaves (this is for serving so prep as you prefer)

For The Coleslaw:

  • 2 whole carrots (peeled into ribbons)
  • 1/2 a red cabbage
  • The juice of 1 whole lime
  • 4 tbsp creme fraiche
  • 3 spring onions
  • 1/2 red onion

The Cooking Method

This recipe is simple enough to follow and does not take a long time at all. If you follow closely, you are sure to have a tasty meal by the end of it.

First, you need to set your oven to 200 C or gas 5. Do this before you start any preparation so that your oven is hot enough to cook your chicken when you are ready for it rather than having to wait and wasting time.

Start by seasoning your chicken breast with salt, pepper and any other herbs your prefer. Rub them into the chicken breast with a little bit of oil and let them rest for a few minutes. This will make your hunters chicken extra delicious.

Next, you are going to want to grab your bacon or pancetta and wrap approximately 3 slices around your chicken breasts until they are fully covered. This may take more than 3 slices depending on how big your chicken is.

Once all your chicken has been covered, place on a baking tray and bake in the oven for 25 minutes until the chicken is cooked through.

While that cooks, you can take the time to prepare your BBQ sauce. While there are plenty of recipes out there that over complicate making your own BBQ sauce from scratch, this recipe makes it quick and simple so that the time between prep and serve is cut down considerably.

All you have to do is stir together your tomato ketchup, garlic, vinegar, paprika and cayenne pepper and you have a delicious sauce ready to serve.

Once the 25 minutes are up, you can remove your chicken from the oven and spread your homemade BBQ sauce all over the top of it. You can add as much or a little as you like here, just make sure there is enough to keep your hunters chicken moist.

Next comes the grated cheese. Again, you can add as much or as little as you want here. Personally I feel like the grated cheese is what makes this dish so I tend to go over the top with it but you can do as much as you wish.

Once you have added your cheese, return your chicken to the oven for roughly 5 more minutes. This should not be to cook your meal any more but instead to melt the cheese and warm up your sauce.

It is at this point that you can serve up your dish with a few sides of choice. However, a side that really pulls this meal together is home made coleslaw. Food is about finding that ideal balance between different food and this coleslaw fits that harmony beautifully.

To make this side dish all you need to do is add the relevant ingredients in a big bowl and stir together until combined. Serve with a topping of spring onions and lime juice and you are good to go.

Place everything together on a plate and you have your ideal hunters chicken recipe.

The Healthier Version

While the recipe above does produce a lovable meal, it is not exactly the healthiest. No matter if you are a busy teen or a CEO, it does not hurt to make the effort to be a little bit healthier.

This Slimming World recipe (which is easy enough to find with a quick search on google) helps you to cut down on those Syns with only 6 Syns per serving.

Here is how the ingredients vary

  • 1 1/2 tbsp red wine vinegar
  • 1 1/2 tsp paprika
  • 1 1/2 tsp garlic granules
  • 2 tbsp Worcestershire sauce
  • 2 x 400 g cans of chopped tomatoes
  • 4 smoked bacon medallions (to make this bacon even healthier, remove any visible fat before use)
  • 200 g grated mozzarella
  • 400 g green beans, trimmed (this replaces the coleslaw from the previous recipe)
  • 15 g flat leaf parsley
  • 4 oven cooked baking potatoes (this is just a recommended accompaniment, it is not a necessity)
