Ingredients
500g of Quorn mince.
One onion.
One carrot.
150g of chopped mushrooms.
One celery diced.
Three chopped garlic.
500g of passata.
200g of chopped tomatoes.
Three spoons of tomato paste.
One veggie stock.
Pinch of oregano.
Twelve sheets of lasagne.
Sauce
150g of butternut squash.
200g of potatoes.
One veg stock.
100g of quark.
Pinch of mustard powder.
One egg yolk.
Method
First, start by frying off your Quorn mince then set it aside, next fry your onion, celery, mushrooms and around 50ml of water for 10 minutes.
Pour the Quorn back into the pan, stir, then add in your passata, chopped tomatoes, paste, garlic and oregano and around 250ml of hot water.
Boil then simmer for about 20 minutes.
Next, take a larger saucepan and add in your butternut squash, potatoes, veg stock and 500ml of boiling water. Boil for 15 minutes then adds 120g of quark, one egg yolk and a pinch of mustard powder.
Take a third of your Quorn and spread it over a baking dish, add the lasagne sheets and repeat the layers two more times, pour over your sauce and bake for 45 minutes.
