Slimming World Vegetable Soup

This vegetable soup is one of the most powerful tools in a Slimming World member's arsenal. Every single ingredient is a free food or Speed Food, which means you can eat as much as you like at any time without counting a single syn. The trick to making it genuinely satisfying rather than just virtuous is building flavour — a good vegetable stock, plenty of garlic, and a long-enough simmer so the vegetables become tender and the liquid takes on their sweetness. This recipe makes a big batch that keeps in the fridge for four days, meaning one cooking session gives you lunches for the whole week. Blend half for a creamy consistency while keeping the rest chunky.

Ingredients

Serves 4

  • 3 medium, peeled and diced carrots
  • 3, sliced celery sticks
  • 1 medium, diced courgette
  • 1, trimmed and sliced leek
  • 1 large, diced onion
  • 3, crushed garlic cloves
  • 1.2 litres, made from a free stock cube vegetable stock
  • 1 x 400g tin chopped tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried mixed herbs
  • 2 bay leaves
  • to taste salt and black pepper
  • 6 sprays Frylight cooking spray

Method

    Spray a large saucepan with Frylight and heat over a medium flame. Add the onion and leek and cook for 5 minutes, stirring regularly, until softened.

    Add the crushed garlic and stir for 1 minute.

    Add the carrots, celery, and courgette to the pan. Stir to combine with the softened onion and leek.

    Pour in the vegetable stock and add the chopped tomatoes, thyme, mixed herbs, and bay leaves. Stir well and bring to a boil.

    Reduce the heat to a steady simmer and cook uncovered for 20–25 minutes until all the vegetables are completely tender.

    Remove the bay leaves. For a partially creamy soup, use a hand blender to blitz about half the soup in the pan, then stir to combine the smooth and chunky elements.

    Season generously with salt and black pepper, taste and adjust, then serve hot with a sprinkle of fresh herbs if desired.

Tips & swaps

Adding a Parmesan rind (if you have one from a block of cheese) to the simmering soup adds an incredible umami depth without affecting the syn count. Remove it before blending. For a more substantial soup, stir in a tin of cannellini beans or chickpeas with the stock — both are free on plan and increase the protein and fibre content considerably.

Courgette, spinach, and cabbage are Speed Foods that add bulk without calories. Butternut squash makes an excellent creamy soup when blended. The only vegetables to be mindful of are potatoes and sweet potatoes, which are free but not Speed Foods — they are dense and filling, which is fine but different from a Speed Food-heavy soup.

How long does homemade vegetable soup keep?

Homemade vegetable soup keeps well in the fridge in a sealed container for up to four days. It also freezes excellently — let it cool completely, then portion into freezer-safe containers and freeze for up to three months. The soup may thicken further in the fridge as the vegetables absorb the liquid; just add a splash of water or stock when reheating to return it to your preferred consistency. Reheat thoroughly on the hob or in the microwave until piping hot throughout.
