Slimming World Slow Cooker Beef Stew

The slow cooker is one of the best friends a Slimming World member can have, and this beef stew is the proof. You spend 15 minutes prepping in the morning, set the slow cooker to low, and come home to a kitchen that smells extraordinary and a pot of deeply rich, fall-apart beef stew that costs absolutely zero syns. Using a lean braising cut that you trim of all visible fat keeps it free on plan, and the long, slow cooking breaks down the connective tissue into a sauce that is naturally thick and glossy without any flour or butter. Root vegetables, herbs, and a generous pour of Worcestershire sauce round out a stew that is indistinguishable from anything you would make with oil and a heavy Dutch oven.

Ingredients

Serves 4

  • 600g diced lean braising beef (all fat trimmed)
  • 3 medium, peeled and cut into chunks carrots
  • 2 medium, peeled and cut into chunks parsnips
  • 1 large, roughly diced onion
  • 2, sliced celery sticks
  • 3, crushed garlic cloves
  • 400ml beef stock
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato puree
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • to taste salt and black pepper
  • 8 sprays Frylight cooking spray

Method

    Spray a large frying pan with Frylight and heat over high heat. Season the diced beef with salt and pepper, then brown it in batches for 2 minutes per side until deeply seared on all surfaces. Do not crowd the pan — brown in two or three batches. This step is optional but adds significant flavour.

    Transfer the browned beef to the slow cooker.

    In the same pan, spray again with Frylight and cook the onion over medium heat for 3–4 minutes. Add the garlic and stir for 1 minute. Transfer to the slow cooker.

    Add the carrots, parsnips, and celery to the slow cooker.

    In a jug, mix together the beef stock, Worcestershire sauce, and tomato puree. Pour over the meat and vegetables.

    Add the dried thyme, rosemary, and bay leaves. Season with additional salt and pepper.

    Place the lid on the slow cooker and cook on LOW for 7–8 hours, or HIGH for 4–5 hours, until the beef is completely tender and falling apart.

    Remove the bay leaves, taste and adjust seasoning, and serve with mashed potato or rice — both free on Slimming World.

Tips & swaps

The browning step in step one makes a significant difference to the depth of flavour — if you have 10 extra minutes in the morning, do it. If you want a thicker sauce, mix 1 tsp of cornflour with a little cold water and stir it into the hot stew 20 minutes before the end of cooking, then replace the lid. Cornflour is around 0.5 syns per teaspoon.

Is slow cooker beef stew syn-free on Slimming World?

Yes — lean braising beef with all visible fat trimmed, root vegetables, stock, herbs, Worcestershire sauce, tomato puree, and Frylight spray are all free on Slimming World. The key is trimming all visible fat from the beef before cooking, as untrimmed fatty beef is not free. Pre-cut diced beef often comes from butchers or supermarkets already trimmed, but always check and remove any remaining fat. Braising cuts like chuck or shin are ideal as they become very tender with long, slow cooking.

Can I use the oven instead of a slow cooker?

Yes — this recipe works beautifully as an oven braise. After browning the beef and sautéing the onions on the hob, transfer everything to a lidded casserole dish. Cook in the oven at 160°C fan for 2.5–3 hours until the beef is completely tender. Check occasionally and add a splash more stock if the liquid is reducing too quickly. The oven braise gives a slightly more caramelised flavour than the slow cooker version, while the slow cooker gives a more uniform, gentle tenderness. Both are excellent.

What should I serve with Slimming World beef stew?

Mashed potato made with skimmed milk (free), boiled or steamed potatoes (free), cooked rice (free), or crusty bread using your HExB allowance are the most popular accompaniments. For extra Speed Foods on the plate, add a side of steamed green vegetables — broccoli, green beans, or peas are all free and Speed Foods. Cauliflower mash is an excellent lower-calorie alternative to potato mash and is also free. A small serving of swede mash (free) is another popular and very flavourful option.
