Slimming World Beef Chilli

Ingredients

- 500g extra-lean beef mince (5% fat)
- 2 x 400g tins chopped tomatoes
- 1 x 400g tin, drained kidney beans in water
- 1 large, finely diced onion
- 2, crushed garlic cloves
- 1 tbsp (adjust to taste) chilli powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 100ml beef stock
- 1 tbsp tomato puree
- to taste salt and black pepper
- 8 sprays Frylight cooking spray
Method

Spray a large, heavy-based saucepan or casserole with Frylight and heat over a medium flame. Add the onion and cook for 6–7 minutes, stirring occasionally, until softened.

Add the crushed garlic and stir for 1 minute until fragrant.

Increase the heat to medium-high and add the extra-lean beef mince. Break it up with a wooden spoon and cook for 4–5 minutes until browned all over. Drain off any excess liquid if needed.

Stir in the chilli powder, cumin, and smoked paprika, cooking for 1 minute to toast the spices into the meat.

Add the chopped tomatoes, tomato puree, and beef stock. Stir well to combine and bring to a simmer.

Reduce the heat to low, season with salt and pepper, and simmer covered for 20 minutes, stirring occasionally.

Add the drained kidney beans and stir to combine. Remove the lid and cook for a further 10 minutes, allowing the sauce to reduce and thicken.

Taste and adjust seasoning. Serve over boiled rice with fat-free natural yogurt instead of soured cream.

FAQs
Is beef chilli syn-free on Slimming World?
Yes, as long as you use extra-lean beef mince with 5% fat or less. Standard beef mince with a higher fat content is not free — only lean mince qualifies as a free food. All the other ingredients in this recipe — chopped tomatoes, kidney beans, onion, garlic, spices, and stock — are completely free. Tomato puree is also free on Slimming World. Make sure you use Frylight spray rather than oil to keep the whole dish at zero syns.
Can I make this chilli in the slow cooker?
Absolutely — the slow cooker is ideal for chilli. Brown the mince and onion on the hob first to develop flavour, then transfer everything to the slow cooker with the tomatoes, stock, and spices. Cook on low for 6–8 hours or high for 3–4 hours. Add the kidney beans in the last hour of cooking so they keep their shape. The long, slow cook deepens the spice flavours considerably and makes for a richer, more developed chilli than the stovetop version.
What toppings can I add without adding syns?
Fat-free natural yogurt makes an excellent syn-free soured cream substitute — just dollop it on top exactly as you would with soured cream. Chopped fresh coriander, sliced spring onions, and diced red onion are all free. A squeeze of lime juice adds brightness at zero syns. Reduced-fat cheese can count as your Healthy Extra A. Guacamole made from avocado is not syn-free — avocado is around 3 syns per 50g — but a small amount can fit within your daily allowance if you want that richness.
