Slimming World Cottage Pie

Ingredients

- 500g extra-lean beef mince (5% fat)
- 800g, peeled and cut into chunks potatoes
- 4–5 tbsp, for mashing skimmed milk
- 2, finely diced carrots
- 1 large, finely diced onion
- 2, crushed garlic cloves
- 2, finely diced celery sticks
- 200ml beef stock
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato puree
- 100g frozen peas
- 1 tsp dried thyme
- to taste salt and black pepper
- 8 sprays Frylight cooking spray

Place the potato chunks in a large pan of cold salted water, bring to the boil, and cook for 15–18 minutes until completely tender. Drain and leave to steam-dry for 2 minutes.

While the potatoes cook, spray a large frying pan or casserole with Frylight and cook the onion, carrot, and celery over medium heat for 7–8 minutes until softened.

Add the crushed garlic and stir for 1 minute, then add the extra-lean mince. Brown over medium-high heat for 4–5 minutes, breaking up any lumps.

Stir in the tomato puree, Worcestershire sauce, dried thyme, beef stock, and frozen peas. Season well with salt and pepper. Simmer for 10 minutes until the sauce has thickened.

Preheat the oven to 190°C fan (210°C conventional).

Mash the cooked potatoes with the skimmed milk and generous seasoning until very smooth and fluffy. Season well — the topping needs to be properly seasoned.

Transfer the mince filling to a large ovenproof dish. Spoon the mashed potato evenly over the top, then use a fork to create ridges across the surface — this gives you maximum crispiness when it bakes.

Bake for 25–30 minutes until the potato topping is golden and the filling is bubbling around the edges. Leave to rest for 5 minutes before serving.

Is Slimming World cottage pie really syn-free?
Yes — every ingredient in this recipe is a free food on Slimming World. Potatoes, extra-lean beef mince, carrots, onion, celery, beef stock, Worcestershire sauce, tomato puree, peas, and skimmed milk are all free. The key ingredient to watch is the mince — it must be extra-lean (5% fat or less) to qualify as free. Standard or regular mince is not free on Slimming World. As long as you use lean mince and Frylight rather than oil, there are zero syns in this dish.
Can I add cheese to the mashed potato topping?
Yes — up to 30g of reduced-fat cheddar grated over the potato topping counts as your Healthy Extra A allowance and costs no additional syns. This is actually a really popular addition — it melts into the potato ridges and goes gloriously golden and slightly crispy in the oven. Sprinkle it on top of the forked potato just before baking. Full-fat cheddar is around 2–3 syns per 30g, so opt for the reduced-fat version to keep the topping free as your HEx.
Can I make this cottage pie in the slow cooker?
The filling works well in the slow cooker — brown the mince and vegetables on the hob first, then transfer with the stock and seasonings to the slow cooker and cook on low for 5–6 hours or high for 2–3 hours. However, the mashed potato topping cannot be added to a slow cooker — you will need to transfer the finished filling to an ovenproof dish, add the mash, and bake it in the oven for 25–30 minutes to get the golden crust. The filling itself actually develops a deeper flavour from the slow cook.
