Lasagne is one of the most beloved comfort food dinners in the UK, and this Slimming World version proves you do not need to sacrifice it. At 3.5 syns per serving, the syns come from the lasagne sheets — the rest of the dish is completely syn-free. The breakthrough here is the quark white sauce, which replaces the traditional butter and flour béchamel. Quark is completely free on Slimming World and creates a creamy, rich white sauce that bakes to a beautiful golden top in the oven. With a proper syn-free bolognese base, this lasagne is indistinguishable from a full-fat version and genuinely satisfying for the whole family.

Ingredients

Serves 6

  • 500g extra-lean beef mince (5% fat)
  • 12 sheets (approx 250g) lasagne sheets (Approx 3.5 syns per serving for 6 people — check specific brand)
  • 500g quark
  • 2 large eggs
  • 120g (20g per person as HExA) reduced-fat cheddar (HExA) (Use as HExA — free; beyond this amount is approx 1.5 syns per 10g)
  • 500ml passata
  • 1 large, finely diced onion
  • 3, crushed garlic cloves
  • 1, finely diced carrot
  • 2, finely diced celery sticks
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 100ml beef stock
  • pinch nutmeg
  • to taste salt and black pepper
  • 8 sprays Frylight cooking spray

Method

    Make the bolognese: spray a large pan with Frylight and cook the onion, carrot, and celery for 8 minutes until softened. Add garlic and stir for 1 minute. Add mince and brown for 5 minutes. Add passata, beef stock, oregano, and basil. Simmer uncovered for 20 minutes until thickened. Season well.

    Preheat the oven to 180°C fan (200°C conventional).

    Make the quark sauce: mix the quark, eggs, a pinch of nutmeg, and generous salt and pepper together in a bowl until smooth and creamy. Stir in half the grated reduced-fat cheddar.

    Assemble the lasagne in a large ovenproof dish (approximately 30x20cm): start with a layer of bolognese across the base, followed by a layer of lasagne sheets, then a layer of quark sauce.

    Repeat the layers — bolognese, lasagne sheets, quark sauce — until you run out of ingredients, finishing with a thick layer of quark sauce on top.

    Scatter the remaining reduced-fat cheddar evenly over the top.

    Bake in the preheated oven for 35–40 minutes until the top is golden, bubbling at the edges, and the lasagne sheets are tender when a knife is inserted.

    Leave to stand for 5 minutes before cutting and serving. Serve with a large green salad — completely free.
