Slimming World Chicken Fajita Bowl

By swapping the flour tortilla for rice and using fat-free natural yogurt instead of soured cream, you get every flavour element you love about fajitas — the charred peppers and onion, the smoky spiced chicken, the cool creamy dollop on top — for absolutely no syns. This is the kind of recipe that makes a Friday night fakeaway feel like a proper treat rather than a compromise.

Ingredients

  • 2, sliced into strips chicken breasts
  • 2 large, sliced into strips mixed peppers (red, yellow, green)
  • 1 large, sliced onion
  • 2 tsp (check for syn-free varieties) fajita seasoning mix
  • 1, juice only lime
  • 160g dried, to serve basmati rice
  • 4 tbsp salsa (supermarket jar, check label)
  • 4 tbsp fat-free natural yogurt
  • small handful fresh coriander
  • 8 sprays Frylight cooking spray

Method

    Cook the basmati rice according to packet instructions in a large pan of boiling water. While the rice cooks, prepare the chicken and vegetables.

    Toss the sliced chicken strips in the fajita seasoning and lime juice in a bowl, making sure each piece is well coated.

    Spray a large frying pan or griddle pan with Frylight and heat until very hot — you want the pan properly hot for a good char on the chicken.

    Add the seasoned chicken strips to the pan in a single layer and cook over high heat for 3–4 minutes per side until golden and cooked through. Remove and set aside.

    In the same pan, spray again with Frylight and add the sliced peppers and onion. Cook over high heat for 5–6 minutes, stirring occasionally, until softened and slightly charred at the edges.

    Return the chicken to the pan with the peppers and onion and toss together over the heat for 1 minute.

    Divide the cooked rice between two bowls. Top with the chicken and pepper mixture, then add a spoonful of salsa and a dollop of fat-free yogurt. Scatter with fresh coriander and serve immediately.

Check your fajita seasoning packet — most supermarket own-brand versions are syn-free, but some blends contain additives that carry a small syn value. A squeeze of extra lime over the finished bowl brightens all the flavours. For extra Speed Foods, add sliced avocado (around 3 syns per 50g), shredded lettuce, or diced tomato alongside the salsa.
