Slimming World Chicken Fajita Bowl

- 2, sliced into strips chicken breasts
- 2 large, sliced into strips mixed peppers (red, yellow, green)
- 1 large, sliced onion
- 2 tsp (check for syn-free varieties) fajita seasoning mix
- 1, juice only lime
- 160g dried, to serve basmati rice
- 4 tbsp salsa (supermarket jar, check label)
- 4 tbsp fat-free natural yogurt
- small handful fresh coriander
- 8 sprays Frylight cooking spray
Method

Cook the basmati rice according to packet instructions in a large pan of boiling water. While the rice cooks, prepare the chicken and vegetables.

Toss the sliced chicken strips in the fajita seasoning and lime juice in a bowl, making sure each piece is well coated.

Spray a large frying pan or griddle pan with Frylight and heat until very hot — you want the pan properly hot for a good char on the chicken.

Add the seasoned chicken strips to the pan in a single layer and cook over high heat for 3–4 minutes per side until golden and cooked through. Remove and set aside.

In the same pan, spray again with Frylight and add the sliced peppers and onion. Cook over high heat for 5–6 minutes, stirring occasionally, until softened and slightly charred at the edges.

Return the chicken to the pan with the peppers and onion and toss together over the heat for 1 minute.

Divide the cooked rice between two bowls. Top with the chicken and pepper mixture, then add a spoonful of salsa and a dollop of fat-free yogurt. Scatter with fresh coriander and serve immediately.

Is this fajita bowl syn-free on Slimming World?
Yes — chicken breast, peppers, onion, rice, and fat-free yogurt are all free foods on Slimming World. Frylight spray is free. Most supermarket salsa jars are syn-free, but it is worth checking the label of the brand you use as some contain added sugar or oil that carry a small syn value. The fajita seasoning is usually syn-free in supermarket own-brand versions, but again worth a quick label check. As long as you use free-brand seasoning and salsa, the whole bowl costs zero syns.
Can I use wraps instead of rice for a lower-carb version?
You can use a wholemeal wrap as your Healthy Extra B on Slimming World, which makes the wrap itself free as your HEB allowance. This gives you a more traditional fajita experience. One small wholemeal tortilla wrap typically qualifies as HExB at around 40g. Alternatively, cauliflower rice instead of basmati rice is free, adds a Speed Food element, and reduces the calorie density further — though basmati rice is also free and perfectly suitable for the plan.

The best syn-free fajita toppings are fat-free natural yogurt (replaces soured cream beautifully), syn-free salsa, fresh lime juice, fresh coriander, shredded lettuce, diced fresh tomato, sliced spring onions, and jalapeños from a jar. Reduced-fat cheese counts as your Healthy Extra A, making it free. Guacamole made from fresh avocado is not syn-free — avocado costs around 3 syns per 50g — but a small amount fits within your daily syn allowance if you want that richness as an occasional addition.
