Ingredients

  • Three tablespoons of curry powder.
  • One onion.
  • 250g of rice.
  • Low cal cooking spray.
  • 600g of frozen peas cooked and mushed.
  • 7 tomatoes diced.

Method

  1. To begin, place a frying pan over medium heat while your rice is cooking, add the onion and curry powder, allow it to fry and become fragrant.
  2. Next toss in the tomatoes, allow the sauce to simmer, pour in the peas and heat through till bubbling.
  3. Serve with your rice.

Slimming World Pea Soup

Ingredients

  • 180g of potatoes.
  • One onion.
  • Three garlic cloves.
  • 350g of frozen peas.
  • 1.2 litres of stock.
  • 5g of mint.

Method

  1. Put your potatoes, onion, garlic and stock in a pan, allow the mixture to boil for around 20-25 minutes until the potatoes start to become soft.
  2. Next, add your frozen peas and simmer for a few minutes, add in the mint.
  3. Blend until smooth and serve!
