What you need to know

Ingredients

  • 800g of 5% less fat beef mince
  • 2 cans of 400g chopped tomatoes
  • 4 tablespoons of tomato paste/puree
  • 2 tsp of chilli powder
  • 1 tsp of cumin
  • 1 tsp of coriander dried
  • 1 tsp of Worcestershire sauce
  • 400g of kidney beans
  • 400g of mixed beans
  • 1 beef stock cube
  • 2 onions diced
  • 3 garlic cloves diced
  • 375g of rice
  • Low-cal cooking spray
  • Greek yoghurt to serve
  • Fresh coriander to serve

The Making

  1. Place a large frying pan over medium heat and spray it with some of you non-stick low-cal cooking spray.
  2. Fry your onion and garlic off together for around 4 minutes, at this point you can add in your low-fat mince and brown it off.
  3. Drain the excess fat from your mince and continue to fry till all the mince is browned off and releases a flavourful meaty smell.
  4. Now you can stir in your tomato paste, chilli, cumin, coriander, Worcestershire sauce and stock cube. You can also lightly season your chilli at this point, however, go easy on the salt as the stock cube may contain a reasonable amount already depending on the brand you used.
  5. Cook your slimming world beef chilli for around an hour till it thickens up and looks like a sauce.
  6. Once your healthy beef chilli has thickened, nows the time to add in your two cans of beans and cook the chilli for another ten minutes.
  7. At this point your beef chilli should be ready to serve, you can garnish the dishes with some greek yoghurt and coriander if your wish for some extra flavour.
