  • 1 medium red cabbage, cored and julienned (or grated if preferred)
  • 1 red onion, julienned
  • 1 apple, cored and diced (Pink Lady or Honeycrisp are great choices)
  • ½ tsp ground cinnamon
  • 2 tbsp sweetener (e.g., raw monk fruit, zero calories)
  • 3 tbsp white wine vinegar
  • 3 tbsp balsamic vinegar
  • 3 tbsp water

Method:

  1. Cut the red cabbage into quarters, remove outer leaves and inner core, then julienne (or grate).
  2. Halve and finely slice the onion.
  3. Core and dice the apple.
  4. Add the cabbage, onion, and apple to your slow cooker, along with the water, vinegars, sweetener, and cinnamon.
  5. Cook on high for 5.5 hours, stirring occasionally, until the cabbage is tender.

Oven Method (Quicker Option):
