If you want to change things up and make a bit of a meal out of it then there are ways of doing that – keep on reading!!

Raspberry & Lemon Trifle 

Serves: 1 

Time: 5 minutes

Calories: 221 approx


  • 1 x Fibre One Lemon Drizzle Cake Square
  • ½ teaspoon of caster sugar
  • ½ teaspoon of cornflour
  • 50g raspberries
  • 3 x tablespoons of reduced fat custard, fresh
  • 1 x decent squirt of squirty cream

If you want to add a bit of decoration, you can use freeze-dried raspberries.


Step 1:

The lemon drizzle cake square will act as the sponge of your trifle so you will want to break it up and pop it down in the base of your serving dish/glass.

Step 2:

Place the sugar into a saucepan with 2 tablespoons of water. This should then be heated very gently (sugar can turn in the blink of an eye). 

You want to get it at the point where the sugar has dissolved.

Step 3:

Ok, now it’s time to make a paste using 2 teaspoons of water and the cornflour. 

Once you have a paste from that add in the raspberries to the pan of sugar and then add in the cornflour paste – stirring as you do it. 

As things progress you can increase the heat slightly. After about 30 seconds the sauce should start to thicken. 

When that happens, remove it from the heat and let it cool for around 1 – 2 minutes. 

Then you can start to construct the trifle by spooning this mixture of the lemon drizzle squares. Leave it to cool for a further 5 minutes. 

Step 4:

Final step! 

Spoon the custard over the raspberry layer and then finish it with cream. 

If you’re decorating with the freeze dried raspberries, sprinkle them on now. 

All done and ready to serve (or consume!).

The reason freeze dried raspberries are recommended is because they make for a really good garnish. 

They add a lot of intense flavour to almost any dessert – even savoury dishes.

Although raspberries aren’t the only thing you can garnish this dish with if they aren’t your thing. 

If you’re wanting to try something else, toasted chopped nuts work really well too!

Mini Cheesecake In A Jar

This one is super simple and super tasty. Nobody should have to miss out on a cheesecake when they’re on a diet – that includes you!

Serves: 1

Time: 10 minutes 

Calories: 289 


  • 1 x Fibre One Chocolate Fudge Brownie
  • 175g low fat strawberry yogurt
  • 2 x tablespoons of 0% fat greek yogurt
  • 1 x large strawberry, chopped and hulled


Step 1:

Grab the fudge brownie and break it into crumbs

Step 2:

Pour the majority of the crumbs into the jar you will be serving the cheesecake in. Leave some aside for decorating. 

Step 3:

Next up with the layering is the yogurt, this goes over the crumb base. Followed by the Greek yogurt. 

Step 4:

Decoration time!

Sprinkle over hte brownie crumbs and strawberries, then enjoy! 

Rocky Road Brownie Recipe

Warm, tasty and sweet. This is exactly what you’re going to get with this recipe.

Serves: 1

Time: 5 minutes

Calories: 124


  • 1 x Chocolate Fudge Brownie Bar
  • Mini Marshmallows, 1 tablespoons worth
  • Milk chocolate chips, 1 tablespoon
  • ½ teaspoon peanuts, chopped


Step 1:

Take the brownie and pop it onto a microwaveable plate.

On top of the brownie put the marshmallows and chocolate chips

Step 2:


Place it on high for around 10 to 15 seconds. You want to see the marshmallows turn puffy and the chocolate chips should start to melt. 

Step 3:

Sprinkle the peanuts over it and serve!

Strawberry Banana Crunch Layer

Make this one in minutes and it’ll give you that sweet fix!

Serves: 1

Time: 5 minutes

Calories: 207 


  • 1 x Chocolate Fudge Brownie bar, chopped into pieces
  • Low fat strawberry yogurt, 4 x tablespoons
  • ½ banana, sliced
  • 2 x tablespoons cereal, multi-grain


Step 1 & Final Step!

Layer the ingredients into a glass – whichever order you prefer. 

I tend to go, brownie, yogurt, banana, cereal but go wild. You do you.

Then do the layer once more to finish.

Ready to eat!

Heart Shaped Chocolate & Raspberry Delight

Treat your loved one to a mighty fine dessert…or yourself! 

Serves: 1

Time: 5 minutes

Calories: 156


  • 1 x Chocolate Fudge Brownie bar
  • 0% fat Greek yogurt
  • 2 x tablespoons low fat raspberry yogurt
  • 1 x teaspoon of white chocolate curls


Step 1:

If you want to make the heart shape (it’s cute so why not?), then you’re going to need a heart shaped cookie cutter. 

However if you don’t then you could try and make a heart shape from it, if you’re feeling daring or make a different shape. Whatever you feel like, let your creative juices flow! 

Step 2:

Take the greek yogurt and make a nice swirl on a plate. Then put the raspberry yogurt on the top of the Greek yogurt.

Place the brownie on top. Then decorate with the chocolate curls.
